🎯Better Atelier: workshops to reveal talent and awareness
Professionals and students form a committed duo to take up a series of challenges combining technical skills, creativity and a sense of service. Each workshop is an opportunity to showcase products, know-how and the art of sharing.
🍃Vegetable’ workshop
A 100% plant-based cuisine in the spotlight with imposed fruit and vegetables. Three creative plates, sweet, savoury or both. At the table, the duo defend their dish and their eco-responsible approach in front of the jury, with a beer pairing from a craft selection.
🌍 ‘Street Food’ workshop
A legume-based takeaway, with a culinary influence of your choice, served in an eco-responsible container. In the dining room, a creative non-alcoholic drink based on Ceder's (non-alcoholic distillate), in perfect harmony with the dish.
🐂🌊 ‘Beef-Sea-Tea’ workshop
A Land & Sea dish based around pieces of Norman beef and iodised products, accompanied by a root or seaweed. The service is based around a food and tea pairing: olfactory recognition for the professional, a tea ceremony for the student.
🧀 Cheese workshop - Semi-final
Three plates of selected cheeses, textures and combinations based on worked pears. In the dining room, the cheeses will be served on a pedestal table, with garnishes prepared live, and an original accompanying drink (excluding wine and spirits).
☕ ‘Coffee in all its forms’ workshop
A savoury dish where coffee is the star, married with a seasonal fruit or vegetable. In the dining room, creation of a cocktail based on coffee, Monin syrup and fruit, in selected glassware (Arcoroc). You'll need to have a good sense of taste and a flair for presentation!
🐔 ‘Whaou!’ workshop - Final
A dish based around Gournay poultry and a stuffed vegetable, with finishing in the dining room. Food and wine matching, choice and explanation of wine, serving techniques (decanting, decanting...): exceptional service, down to the smallest detail, to make a lasting impression.
